My wife just asked me the other day what I'm going to do after IM, and I gave her a list of about a dozen things I was thinking of. She's still on the couch, with her mouth wide open, as I think she expected me to say I was going to stop with this foolishness... She should have known me better.
I don't know if any might speak to you, so I'll throw some out there that aren't just related to me:
-AT or John Muir trail (or other thru-hiking or even fast-hiking events )
-Cross country ride (I like the fast southern eastbound route - a few weeks and you're in Savannah )
-Badwater qualifier tree (start with Trixie and FitPhd and a 50 miler, work your way up ).
-Adventure racing (Jen's lucky that Probst has moved on from his eco-challenge days, but there's still some fun ones out there )
-Couch to IM book (memoir, not manual )
-Get 26.2 couch-bound friends/acquaintances to finish a marathon (26 Mary's and 2 5k's )
-"Ironman Revisited" with CAF
-NOLS / BOSS or other wilderness learning experience
-Create a race
I've actually done a little poking around at all of these to get an idea of what it might take, if you're curious. In the meantime, keep revelling in your glory and make sure you're wearing that finisher's medal.
