Expert ![]() ![]() ![]() | ![]() With all this free time I have right now I've decided I want to finally move beyond the typical college student eating and learn to cook. So....post some of your favorite easy (and at least relatively healthy) recipes here! Easy is the key though, as right now my cooking abilities essentially consist of "just add water". Or, when I really go all out, I occaisonally get all the way up to "just add water, milk, and butter"....so this "real" cooking stuff is new to me! |

Master ![]() ![]() ![]() ![]() ![]() ![]() ![]() ![]() | ![]() Wash a potato, cover in foil. Turn oven on, put potato in oven. Take steak from fridge. Place steak on top of stove so that it will warm up. Go for a run - about 35-40 minutes ought to do it. Turn on grill to preheat. If you're fast, take a shower. put steak* on grill, apply heat as needed. dump some salad on plate, add dressing of choice. place potato next to salad, adjust potato with 'fixins' as desired. Go get steak and place next to potato. Eat. Then do that ice cream thing... *Recipe will also work with other meat, or meat substitutes. |

Pro ![]() ![]() ![]() ![]() ![]() ![]() ![]() ![]() ![]() | ![]() Here is a pretty good recipe for grilled chicken breasts. 1/2 cup of Italian dressing, can use more if needed(use generic brand here) 1/2Tsp Garlic powder 1Tsp Liquid Smoke(optional if using charcoal) 3-4Tbsp of Lemon Pepper (salt-free) Toss 5 or 6 breasts and ingredients in a ziploc bag and mix them up well Let this marinade over night. You can occasionally give the bag a few spins throughout the day to ensure even saturation. Grill them up !! This serves up nicely with some Jasmine rice and a little Jamaican Jerk sauce. Throw in a salad and you're in business. |

Elite![]() ![]() ![]() ![]() ![]() ![]() ![]() ![]() ![]() | ![]() Pot pies 4 cooked chicken breasts, cubed 1 can cream of something soup (chicken, mushroom, whatever) 1 can cream of celery soup 1 15oz can peas and carrots 1 15oz can diced new potatoes 1-2 cups frozen chopped broccoli (or other veggies will work ... spinach) 1 small jar chopped pimentoes mushrooms, if you like shredded cheese, if you like some garlic some salt and pepper Of course, you can use low fat/fat free soups ... Mix above ingredients together and divide into 2 frozen deep dish pie crusts. Cover each with a rolled, refrigerated pie crust. Seal edges. Cut slits in top of crust. Bake at 350 degrees for 45-60 minutes until bubbly and crust is browned. Cook one ... freeze one. They keep very well in the freezer. HINT: Eliminate bottom crust to cut calories ... but seriously ... ![]() HINT: Browned, seasoned stew beef can be substituted for chicken ... use cream of mushroom soup x2 ... hearty alternative Edited by 1 Foot The Other 2007-06-14 9:00 AM |

Slap 'em into patties and throw 'em on a hot grill (clean, oiled grate of course). About 5' per side. DO NOT overcook or they'll be tough and nasty. Throw 'em on a whole wheat bun and steer clear of the mayo and you've got yourself a healthy meal!

My first job was in a kitchen gadget store and when it was slow (always) I would flip thru the cookbooks in the store. I would try the recipes out at home for my Dad and sisters. To this day my favorite cookbook is one called "Dad's own cook book" by Bob Sloan. It's one of the first cookbooks I ever read and I still use recipes from it all the time. It taught me all the basics and also has some very fancy recipes that are easy to make. Rachel Ray's books are good also and there's another one called "How to Cook without a book" that I love! Recipes are great to have, but if you have a basic knowledge of cooking to go with it, you will be able to throw things together and improvise. That's a lot more fun! |

![]() | ![]() I'm making this tonight - it's just pasta salad but the fresh veggies make the difference (the original recipe also called for cheese and bacon but I omit that stuff): 1 package tri-colored spiral pasta 1/2 red onion, chopped very small 1 green pepper, chopped 2 roma tomatoes, seeded and chopped 1 cup light ranch dressing Cook pasta. While pasta is cooking, chop veggies. Rinse cooked pasta under cold water, transfer to bowl. Add veggies and salad dressing. Mix. --------------------------------------- REALLY EASY PEANUT BUTTER COOKIES (gluten free, too) 1 cup peanut butter 1 cup sugar* 1 egg Mix ingredients. Form dough into little balls (heh) and criss-cross with a fork. Bake in 350 degree oven for 11-14 minutes. *To make healthier, you can substutute Splenda or Splenda-Sugar mix. The consistency will become more crumbly, but still easy and a great flavor. |

Got Wahoo?![]() ![]() ![]() ![]() ![]() ![]() ![]() | ![]() 2, very easy. Honey Chicken 1 cup honey 1/2 cup melted butter 1/4 cup mustard 1 teaspoon curry. Mix thouroughly until consistenly brown and fluid Pour 3/4 of the sauce (save the rest for the plate) over 4 boneless chicken breasts in a tight fitting pyrex or other container, bake25 minutes, turn breasts (or baste them) cook another 15 minutes. Server over or next to white rice Sweet pork tenderloin (can substitute chicken or pork) *SO GOOD* Cut tenderloin at about an inch (at angle for presentation), set aside 1 cup of real maple syrup 1/2 apple juice. Dice or slice the apples, set aside. Pour syrup and juice into wide skillet pre-heated to medium high/high and reduce (stir) for 7-10 minutes - do not leave alone. After about 10 minutes of reducing, the mixture should be dark and semi-sticky. Add tenderloin, cook over same heat for 20 minutes, stirring/searing the meat. Add the diced apples, cook another 5 minutes and serve with Mashed potatos or egg noodles.

The best burgers ever: 1pkg 93/7 lean beef 1/2 red bell pepper 1/2 green bell pepper 1 really small yellow onion handful of oats balsamic vinegar Finely dice peppers and onion. Add all ingredients to meat. Mix by hand. Broil/grill. "The Salad" 1pkg 50/50 salad mix (spinach & other greenery) or Veggie Spring Mix 1 can cannelini beans 1 can chickpeas Sliced grilled chicken Rinse/dry beans. Add to salad greens. Place chicken on top. Add dressing below: Dressing: Whisk together 1.5 tbsp Dijon mustard w/2.5-3tbsp Balsamic vinegar. Add some freshly ground black pepper. Slowly drizzle in (while whisking vigorously) 2 tbsp olive oil. Adjust for taste - I personally like my dressing on the vinegar-y side. |

I don't think I've made one dish out of there that we haven't liked. Oh yeah, they have a website too - www.cookinglight.com. They just changed the site so when you search for recipes it brings things up form lots of magazines though so you have to look for the Cooking Light ones if you want to keep it kind of healthy.
