Make it half a bagel.  Measure the peanut butter.  Most people think they are using 2 Tbsp (the amount listed as a serving size on most brands of PB) when they are using closer to 3 Tbsp.  

The other option is Thomas's makes a mini bagel that's about 110 cal.  I buy the whole wheat ones.  Still measure the PB cause it is the calorie killer.  Use an all natural brand.  Seriously, read the labels on most brands of PB and you will find sugar high up on the ingredient list.  Don't even bother with Nutella.....sugar is the first ingredient in that stuff.

Bah I can't find the recipe online but here's a great little muffin that you can play around with.  Turned out really moist and tasty.  My kid even likes them!

Trail Mix Pumpkin Muffins

3/4c brown sugar
1/2c melted coconut oil
2 eggs
1T vanilla extract
1.5c brown rice flour
1c rolled oats
.5c ground flax seed
2t ground cinnamon & ground ginger
.5t allspice
2t baking soda
1t baking powder
2c pumpkin puree
1c trail mix or dried fruit etc.  I chose a mix with seeds vs. nuts so my child could take it as a snack to school

Preheat oven to 350. Set 1T of the brown sugar aside.  Beat together remaining sugar, oil, eggs & vanilla.  Then add the dry ingredients and beat til combined.  Add pumpkin and trail mix and beat again til mixed.  Make the muffins and sprinkle the 1T of brown sugar over each muffin.  Bake 25-30 minutes. 

Makes 12: 343 calories, 17g fat, 44g carbohydrates, 4g fibre, 7g protein

I'm off to make a batch now. 
REALLY rainy cool weather here in Toronto.  Postponed my long run until tomorrow which... is supposed to be cold and rainy as well

On the weekend I make a batch of homemade egg and cheese sandwiches to eat all week... wrap them in wax paper, put them in the fridge, and then when you're ready for it, microwave them for 25-30 seconds and yummy goodness!

I've made some changes, but it's all about the same.  I use thin rye bread (just because that's my preference) and Egg Beater type eggs.  I skip the meat mostly because I'm lazy and don't feel like I need it and instead use a thicker slice of cheese.

I also bought one of the muffin top pans she talks about and that works out GREAT... a carton of the egg beaters is the exact right amount for 6 sandwiches.

They take only about 5 minutes of active time to put together + baking time for the eggs.

Satisfying and all for about 200 calories.

Have you tried the powdered peanut butter? It's low cal and low fat. 45 cal and 1.5 grams of fat for 2 tbsp. it works well in smoothies. There are directions on the package for reconstituting it with water, but I don't know how it tastes by itself.

Cottage cheese with some almonds on top, maybe a sprinkle of cinnamon.

late in the evening but just finished 30 mins on the trainer.  horrid nutritional day. only had breakfast and dinner was a little bit ago before the ride. only reason i rode is because i felt guilty not doing anything.

Today's nutrition posted.

No training.  Hurricane Sandy is bringing some stuff I don't feel like running in.  The bike is still broken.  Pool is closed.  We're packing to move on Tuesday.  This whole weekend is a bunch of suck.
On the flipside, I did get out of a 24 hour shift.  I guess Hurricane Sandy has ONE upside.

 

On other topics...

I was reading AbbieR's blog.  Inspirational. 
I once said I'd never do a full iron because the thought of putting my 239 pound arse through the hell of a marathon was not appealing.  I might eat crow at some point, because I'm starting to think that maybe I'm just being a wuss.

Had a little 5K this afternoon.  It didn't exactly go as planned, but I did finish with a PB!  I will call that race a success. Did ok in the eating department until I picked up Timothy.IT was dinner time and the errands I had to run were on that side of town (I live on the other) so I opted to take us out to eat.  I had a grilled turkey and swiss cheese, unsweet tea and we shared mozzarella sticks (his favorite).  

Not sure what will get accomplished tomorrow, as I don't know when Timothy is going back home.  I've lined up 3 sub jobs for next week as well.  Talked to a pastor friend at the race today and he gave me some things to think on and meditate on.

Saturday was a great workout day but a nutritional fail. Family get together that involved a bonfire and a lot of tasty food that I don't normally eat.  Today I have a sugar hangover. Ugh. Headed to the pool in a bit.

Went to a wedding last night and I should probably log the 'exercising' I did on the dance floor.  Definitely felt like interval training at 5-10 minute increments.  I'll just let this picture speak for itself.

Ate pretty well, but more wine than I needed last night.

Kind of a strange dinner. I had a late lunch, so I wasn't really hungery at dinner time. But, I thought I should eat something. So, I had a small bowl of soup. That seemed to trigger my hunger and all of a sudden I felt likem I could eat anything. I followed it it with large bowl of chili, which felt like a small failure.

My diet yesterday was relatively clean but pretty carb heavy... I made turkey and veggies for me but that couldn't resist a little scoop of mashed potatoes and gravy.  And I'd had pasta for lunch... and I did nothing cardio aside from walking the dog once.  I could *try* to justify it by saying I was loading up for todays run but I'd be lying!!

Just got my long run in and will focus on trying to eat really healthy today though my confession is that I want to make a big batch of Korean chap chae (like spaghetti) and devour it... control... control... control.

Is chili all that bad?  A good source of proteins and carbs.  I'm thinking there could be far worse cheats so I wouldn't beat yourself up too much Nathan... it's nothing 100 core exercises couldn't fix ha ha  I never did fit my core in this past week eek!

I ended the day with a 3 mile run last night. It wasn't all that fun. This morning I got up and rode 25 miles, came home and made two batches of banana yum. One is bread for my husband with walnuts, and the other is chocolate chip banana muffins for my son. Both of those baddy foods are calling out to me. 

Feeling tired again today and not quite sure why. Just overall Blah. I'd like to go running again tonight, but the idea of that feels blah too.. lol...  

I am going to try the egg breakfast idea and make those tonight.

I need to invest in a treadmill.  Hurricane Sandy is keeping me indoors again. 

Based on storm predictions, it looks like I won't get to workout again until Wednesday or Thursday.  Some core work, perhaps, but no S/B/R.  Not happy about that.

My confession is that after eating clean all day and choosing a healthy dinner at my daughter's birthday dinner (cheesecake factory)  I still wound up eating cheesecake for dessert.  At least it was the low cal version.  But I am sure it was as many cal as my "skinny" herbed salmon and veggies (they slather it with parsley, not my choice of herb crusting  I would have thought something more impressive than dried parsley flakes!)

Brunch this morning.  The omelette guy had his eggs premixed, but went back to the kitchen to get me some egg whites to make a special omelette.  Its amazing how accomodating people will be if you just ask!  Did well on my choices except for those yummy hash brown potatoes!

Yuck. Dried parsley rub doesn't even sound good! :X
