When I lived in Colorado I used to make a crockpot full of green chile for holiday parties.  The entire thing would be gone in minutes.

For something healthy, I make Quinoa Party Salad. 2 cups quinoa 1/4 c olive oiljuice 1 lime1 T ground cumin 3 c thawed corn kernals1 15 oz bpa free can black beans1 med red bell pepper1 med orange bell pepper1 jalepeno pepper seeded1 c fresh cilantrosea salt & gr pepper to taste Wash 2 c quinoa & drain. Cook in 4 cups boiling water. Set aside and let cool.Chop vegetables (I used all organic)Make dressing: olive oil, pepper flakes, lime juice and cuminCombine veggies and cilantro and quinoa then toss with dressing and enjoy.

My husband and I went to a potluck with his coworkers last weekend- things had to be vegetarian-I made chana masala, homemade naan bread and rice. It went over really well. I just made the sauce in the pan like I normally do, threw chickpeas in for a tiny second, gave it a 2 hr ride in the crock pot, then transported it in the crock pot and set it on "warm" so it would remain so during the party.

I always bring a salad to the office potluck.

My standard potluck fare is baked beans, but we don't really have a good way to heat them up in the office, so I bring salad there.

Chili seems popular, as is gumbo.  I usually do a soup, either NE Clam Chowder, Macaroni and Beer Cheese Soup with Bacon, or my personal favorite, Kansas City Steak soup. My suggestions seem to skew towards a crock pot.
