My swim coach has been hammering bilateral however we do work on lateral left and or right side...since it is best to have the ability to go with whatever the conditions ie: wave chop and environment ie: another swimmer right beside you ,will dictate how I breath.

I found in my last race , a HIM...once I got into the open water I was doing a 2/3/2 which was practiced as well...seems to be an efficient means of breathing and a good overall balance....for me.

I also like the 2/3/2/3 pattern for races.  Breathing on both sides has helped me swim straighter in OWS as well.

Started bilateral breathing in high school when trying to fix a nagging shoulder injury.

I still breathe bilaterally - unless it's a sprint of like 100 yards or less, then I tend to revert to just right side...

Only recently.  My masters swim coach was extolling the virtues and benefits of bilateral breathing one day(he knew that if he just said that's how it should be done I would ignore him) and I decided to actually try it on my own in my own way.  And what do you know?  I'm still not used to it but it's much better because it makes it possible for me to breathe every third stroke instead of every fourth.  Wow!  Amazing what happens when block heads like me listen to people who know what they are talking about.

In the pool, 100% bi-lateral. 

In OWS, usually a mix.  I try to start breathing every two strokes to prevent anxiety and make sure I am exhaling enough.  After 300-400 yards and I know I am past the "panic attack" distance, I go bilateral if the course is opened up a bit.  If I find myself in heavy traffic, I go back to every 2 strokes.

I have gone bilateral from the start on OW swims and those always seem to be the swims where I get the good old panic 200-300 yards in.  Probably from CO2 build up (or just sucking at OWS).

That's an important statement.  The ability to breathe competently on both sides is more important IMO than the ability to breathe bilaterally.

I started breathing right, then took lessons and learned bilateral. For a while I did strictly bilateral or did sets breathing to my left to get used to it. Now I'll breath whenever I want to, sometimes bilateral but sometimes mixing in several breaths on 2 strokes to either side. I still find breathing right feels slightly more natural but sometimes breath left for a ways without thinking about it too. I tend to breath right more often during a longer race but settle into long stretches of bilateral too. I've sometimes caught myself going 4 strokes to a breath without thinking about it if I'm doing an easier set.

I went from unilaterally to bilaterally by basically starting all over again in the pool, and just forced myself to do it.  I like the balance it provided me in the water, and I don't get that post-swimming vertigo.  I will breathe a little more often, like BikerGrrrl said above, when I feel really winded.

I breathe twice out of each side. (Left, stroke, left, stroke, stroke, right, stroke, right, stroke, stroke etc...)  It keeps me swimming in a straight line, it lets me see whats happening on both sides, and when going at a hard effort, I don't run out of breath as easily.

Honestly, even in whopper ~10k swim sessions or recovery swims, I am rarely going slowly enough that bilateral (3-stroke) breathing is going to get me enough O2. Maybe during the warm-up.

I breathe probably 75% to my left and 25% to my right, but I've had to swim extended time/distance just breathing to the right and that's fine.

Training -- bi (either every three, or switch sides occasionally if I'm breathing every cycle).  Racing I tend to go one way.  In a pool, that's to the left.  OWS it depends.

How about competent breathing to either side? 

When I became a lifeguard/swim instructor, I figured it would be good if I could show kids how breathing (properly) looked to each side.  It wasn't pretty when I started, but I stuck with it. 

"Easy" sets I'll breath every 4th pull, to the left on the way down the pool and to the right on the way back. 

"Moderate/hard" I'll breath every 3rd pull (bilaterally).

Last winter during some coached sessions, the coach would have us stretch out breathing from 2 or 3 to 4-5-6-7-8-10.  (Breathing every 10th pull is about once half-way down the pool and again at the end)

This is what I do most of the time too, and for the same reasons. It's not always that way, though. My breathing pattern changes with my effort level, and this is where I tend to settle in during races unless the sun is in my eyes on one side or if there are waves on one side.

First thing I did when I started swim training when I started in 04 was to get comfortable breathing on both sides.  The indoor Y pool I swim at has a full length mural on one of the side walls and I made sure I looked at when swimming each direction.  For OWS swimming having this capability is a must as you never know where the sun will be in relationship to the course and/or which way wind driving waves will be coming from, etc.

I clicked fish, but that may skew the results.  Technically I breath bilaterally and always have (at least as long as I can remember).  For me it's all about the rythm and where it needs to fall.  generally every 3rd stroke.

Bilateral on 3 in the pool.

2/3 in OWS, sighting on the 3. I find that breathing more often and sighting frequently helps with my motion-sickness.

If I get panicked for any reason, I will breath on every stroke until I catch my breath rather than resort to breast stroke.

When I'm at a cool "cruise speed" I do 3 strokes, breathe, 4 strokes, breathe, 3 strokes breathe, and repeat.

Totally understand...I can't really kick worth a damn, so I always end up sputtering.  You just have to kick harder!  I know it sucks...it will pass.  I used to be totally gassed after 100m of these body position drills.  OR! Buy some fins.

Not really sure what to check--maybe unit trying to be bi? When I was a teen and swam competitively (19:53 for the 1500m) for some reason I always breathed to the left with a 2-2-4 pattern.  I don't recall a coach ever telling me to change my breathing!  But in my first Oly distance OWS, I got pretty seriously off-course due to sighting only to the left and drifting to one side, so I have been working over a year, with and without a coach, on breathing to the right. I can now do it comfortably in open water and in a race when I need to (for sighting, avoiding waves, etc.) I try to do some of each pool workout breathing bilaterally to maintain the skill. For some reason it feels more natural in open water. In a hard pool effort or OWS when it doesn't matter, I just use my preferred 2-2-4 rhythm as it works for me. I don't believe unilateral breathing necessarily slows you down if your stroke is otherwise efficient, but it IS a useful skill for OWS!

It took me a great deal of time to learn to breath bilaterally, but was worth it. I swim bilaterally now 95% of the time. It was kind of like learning flip turns...a total pain in the a$$, but in the end I'm glad I did it.  

Forget I mentioned flip turns...that's a whole other discussion :P

Sounds like you had a pretty efficient stroke when you were swimming competitively. I think the unilateral pattern is slower at harder efforts at least for me. Definetely can feel the resistance in my turnover from the 2-2 breathing verus the 3-3. My stroke is not efficient enough yet.

On OWS every 3rd has kept me from having to sight as often in some straight lake swims.  I was going straight between the shores and as long as I was parallel on both sides no need to look ahead till the exit.

I'm normally a right only breather but I've been practicing left only during some of my drills - kick and left arm - plus I've been trying to do bilateral breathing during my pull sets to get used to it.
