Sounds gross but whatever works for "your" needs is good to go. At B2B i had a pb&j and a dove chocolate bar in my run sn's bag because i knew I'd be fed up with gels etc by then.

Most specialized sports drinks, gels, shot blocks, etc utilize long-chain carbohydrates that are supposed to cause less GI issues and are utilized at a steady rate as if they are time released.  Simple sugars (candy bars) can cause more GI distress and are utilized rapidly causing a spike in energy then a crash.  At least that is what I have ready...YMMV

There will be an aid station about every 10 miles at IM brand races, and they will hand you Perform, water, and sometimes bananas or gels. 

Yikes, only sometimes? It would be good to know whether you could count on getting something at every station. Are there supposed to be people handing up gels, etc.?

I'm sorry to give you a scare.  I only take perform and water from the bike aid stations, so I'm not sure if the other stuff is at every aid station.  They could've easily been at every aid station, but I just didn't notice.  You can probably still look at the athlete guide from the previous year's race on the race website, and see the exact offerings.

Some simple sugars cause some people more GI distress (fructose is one in particular that affects some, though not all, people that way).  As far as a spike in energy, that is really not a concern during exercise.  So simple, complex or a mix (which some tests show is better) is fine as long as they don't cause you the GI distress mentioned.  Candy bars may be an issue because they are more difficult to digest (solid food, contain fats, etc), but not because of the type of sugar in them.  But I know many an athlete who has put down a PayDay bar or something during a race.  Sometimes the variety/taste/whatever outweighs the fact that it may not be 'ideal'.

I like to eat a snickers in T1 for HIM and the two IM's I have done.

I rarely eat snickers in training.
