PB&J was a major staple of my school lunches in elementary school. goober grape showed up on the scene at some point. eventually, i found PB&J to be nauseating and couldn't eat it for many years until i was an adult. to this day i still have negative feelings about grape jelly. strawberry preserves on the other hand...mmmmm.

My Mom kept it in the fridge (when we could afford it, my Dad thought it was just plain laziness that you had to pay for) and my Mom was never wrong (just in case she is reading this, I don't want to get the wooden spoon, ya know).

I was a wilderness canoe guide for two summers, and peanut butter and jelly were two things that we brought on each trip. We'd spread them on bagels for a couple of the lunches. We kept the jelly in ~1 pint nalgene containers (no not bottles) and it wouldn't be refrigerated for the whole trip. Never had any problems at all. If you're worried about things getting too warm, just keep it in the middle of your pack and keep the pack out of the sun.

We'd also take a hunk of cheddar cheese with us and often wouldn't finish it until day three or maybe day four. While it was oily by that time, it was still fine to eat. There are plenty of things that are fine to keep without refrigeration for a few days that will still be perfectly edible.

That being said, I wouldn't touch goober-grape with a 10-foot pole. BUT, I do understand the appeal of things like that for little kids. Have a good camping trip.

Last thing, we get bulk organic peanut butter from our local co-op (ingredients: peanuts). It doesn't need to be refrigerated at all.

Seriously, I almost never eat PB&J any more, except when we go on longer, organized rides and I get a half sandwich at almost every sag just to keep the calories coming in.  Not sure why, but there's something about it that works great for long bike rides.

Food Science Moment

Beyond the preservative systems that are in it (I think I read sodium benzoate or potessium sorbate) the products have a few other things working for them.  First, the water activity (moisture available for bacteria to grow) of the peanut butter is low enough that most pathogens won't grow (spoilage organisms might like mold and yeast and stuff but not bacteria).  Two, the sugar content of the jelly is also probably high enough where the osmotic pressure won't allow most organisms other than spoilage ones (again probably only yeasts or molds) to grow.  Finally, I would be willing to wager that the product is hot filled into the jars (150F or higher) which will significantly reduce the amount of bacteria that is alive when filled.

That is your science lesson for the day.
