Are you referring to the "less than 20 parts per million" thingie-ma-bob-ruling? I did not know restaurants were included... are they? That would be SUPER AWESOME for me, but pretty much suck for them. EVERYTHING in restaurants contains gluten. And even when it doesn't, most restaurants put a legal disclaimer that it "might" because it's cooked with shared surfaces and utensils. But PF Changs separates everything - cooking surfaces, utensils, even plates. They rock. Yep. That's what I'm talking about. And yes, restaurants are included. And they have absolutely no idea how they are going to comply nor how it is going to be enforced. Easy for manufacturing, they just lump GF test into all the other tests they do to release the product (food safety, quality, nutrition, etc), but those tests are expensive so how is a restaurant going to prove the product is below that 20ppm. Nobody has a clue yet. |

How long do the restaurants have to try and get in-line with the ruling? I'm not in any way trying to say this is a bad thing, I'm just wondering out loud, if you will, how this is going to come about. |

And to make it all the more complicated, restaurants do not fall directly under FDA rule, they fall under state health department rule. So in reality, the FDA has no direct authority over restaurants. Which is the other reason they have no idea how this is going to be enforced. And the states traditionally follow the FDA Model Food Code, but this exists outside of that. So all in all, it is a mess. |

August 5, 2014 is the date that the compliance goes into effect... one year from the date it was announced. Definitely a mess! Edited by lisac957 2013-11-05 10:33 AM |

August 5, 2014 is the date that the compliance goes into effect... one year from the date it was announced. Definitely a mess! Right. But they have yet to say how they expect restaurants to comply. Every product has to be proven or do they demonstrate their process is good enough to produce a GF product? They haven't said what they will accept. And you KNOW they will go after the big boys like PF Changs first. ETA: it is possible that restaurants that are currently selling GF products will stop labeling them or find a way around the GF label and call them something else. Which will likely create market confusion. Edited by crowny2 2013-11-05 11:04 AM |
