I just saw this and would love to jump in. I'm nutritionally challenged!

The good about my diet: I'm a vegetarian, I do love fruit & veggies, I rarely skip a meal and I dont drink soda.

The bad: I eat too many processed carbs, I could eat peanut butter at every meal, I love sweets and coffee.

The Ugly: I work at a preschool so I eat like a preschooler- goldfish crackers, cupcakes, fruit snacks (not the healthy kind), juice boxes and animal crackers!

I'd like to lose a few lbs but more than that I just love how I feel when I eat well. I have one more week at work then the summer off with my kids, I'd really like to learn to eat like a grown up!

Ok, Trix.  I'm relatively new at this "clean cooking" stuff.  Today, I decided to make some pan-grilled shrimp.  I used 2 tablespoons of oil just to keep it from charring (NO breading of any kind) and then I added regular seasonings (pepper, garlic, basil, etc).  Is this considered "fried" since I used the oil?

Had to take a cheat meal yesterday. Its a really bummerooski when you don't have the choice. In this case, I was judging a music contest and the lunch was provided for us. BBQ sandwiches on big white rolls. The good news is that I avoided the GINORMOUS banana bars and had only a few peanut M&Ms. The sad part is that it wasn't really worth it. If I'm going to have a cheat meal, I'm going ALL OUT. Next cheat meal is gonna be epic!

After almost a week of this healthy eating nonsense, I'm struck by how many choices we're faced with every day. Its hard to not eat the fries or get that little bit of ice cream. At least it is for me.

This afternoon is a 19 miler in which I'll burn off that BBQ and then some!

On day 7 for me.  Cheat free.  Lost 3 lbs while PMSing and on my period.  THAT is awesomeness.  Plan on cheating next Saturday when I go out for sushi.  I don't consider that cheating really, but I plan on having a glass or two of wine as well and I'm sure I'll overindulge in the fishies.

So.... the plan I'm doing, I've noticed my brain is always awake and never tired!  My body is sorta, but I might blame my cycle for that.  But seriously, by brain is totally awake the entire day from 5:30am until I figure I better go to bed.  Kinda made me frustrated yesterday while I lounged in the sun while the kids were swimming at the pool.  I wanted to sleep in the sun but I guess my body is getting what it needs and so it didn't want to sleep.  weird.

ok, I'm not afraid to admit I suck at this.  I need to do some changes....I shall eat healthy EXCEPT for 1 cherry pepsi per day for 1 week.  I will then cut it down to 1 every other day.  Soon, it will be gone.

SO, pretty much I'm telling you I'm not gonna win the rubber chicken, which makes me very sad as I actually have uses for such silly things.  But as I stated earlier, my goal here was to realize how much crap I was eating and change it, I am....now I'm just drinking crap!!

What I'm finding out is how hard some decisions to make are. Take some of the stuff you eat, just a bit of everyday. My eye opener to night as I was making my lunch for tomorrow was, Grey Poupon Dijon Mustard - Mustard, vinegar, spices, sugar.......
WAIT..... SUGAR! What the heck is SUGAR doing in mustard! It's supposed to be tart, not sweet!

Maybe I can find a replacement at Trader Joes. One of my last jobs, one of the developers would go to the UK often and would bring me back a metal "toothpaste tube" of mustard, that had only mustard as an ingredient. It was the BEST!

HEAT oven to 425 F. In one large bowl combine 1.5 cups all purpose UN-enriched (if ya can find it) flour, 1.5 cups whole wheat flour, .5 cup quick oats (I used one minute Quaker), .5 cup wheat germ, 1.5 tsp baking soda, and .75 tsp salt. Stir 'til combined.
In small bowl combine 1.75 cup buttermilk and 2 tbsp honey (I wisked it softly). Add liquid ingredients to dry stir to combine, turn dough out onto floured surface, knead if desired and pat into circular shape. Place on greased cookie sheet and bake 15 minutes. Reduce temperature to 400 F and bake 15 more minutes until bread sounds hollow when you tap it. Let cool.

another p.s. butter doesn't have sugar in it

Some dijon mustard doesn't have sugar.  I actually just checked the bottle I have.  It's French's spicy brown mustard - vinegar, mustard seed, salt, spices, tumeric.

I've been doing pretty well so far. I had my one cheat day and I ate pizza.  It really wasn't worth it, though, since it was a fronzen pizza. I was dead tired from my soccer game and didn't want to make a thing.

Now I'm sick and can't taste anything. I might as well eat cardboard :-(

Yeah, I ate a lot of crap that I didn't realize I ate.  And its usually just little munchie things.  I had a cheat day this weekend and jazzwithnumbers and I went to the bar.  We drank beer and had a merry good time.

I am doing ok with the challenge although I still think some of what I eat is crap.  But I have made myself dinner EVERY night of the challenge thus far.  Before I would get lazy and eat something processed/quick.  I like cooking much better.

I know it is crazy. I am perfectly OK with the meals. But, I crave the diet soda more than anything else.

Diet Coke is a horrible addiction to kick.  I've been trying for two months now!  I think it's so hard because it allows me to feel like I'm having a "treat" without having any calories.  But I know the aspartame is not doing my body any good, so it needs to go.  I'm on vacation this Thursday through next Tuesday and then I'm joining you guys for real!  It is hard.  But it is necessary.  Good job to everyone who has been "cutting the CRAP" the last week!!

The hard part is if you workout after work it is so easy to just go home and take something out of the freezer. I am also cooking something fresh every night. It is kind of nice. I used to cook all my meals on Saturday and freeze them. I know it has only been seven days we will see if I still feel the same six weeks from now.
