Don't want anything which will saturate a spongy thing like polenta. I like the mushroom idea. Depending on how you're preparing the tilapia, but anyone worth their salt would make a fruit salsa and blacken and grill the fish. The polenta is fine as is in this case.

Well, I was thinking pan fry the polenta medallions and sauté the tilapia in the oil/herb mixture.  Deglaze with a little white wine and add a little butter and drizzle on top.  Not saturate the dish...  I could plate on a bed of mixed greens or have them on the side...

That's what I like about cooking - just wing it in the moment.  People often ask me for recipes, and I really can't tell them.  Because its spontaneous

Ia m really starting to feel like I finally want to put a race schedule together. This year I am wanting to do an OLYMPIC and a HIM for sure, with maybe some others thrown in if I feel like it. There is a HIM on my bday I am thinking about running!

Anybody ever done Goosepond HIM in Alabama?

You are making me feel guilty that I should think of a race schedule. I didn't have one last year. I did one sprint and one HM and that was my year and both times I kind of pulled the trigger last min.

I should put something together this year. Maybe if I had some commitments I wouldn't be so fat.

That is what I was thinking kind of commit myself to something. I had so little desire to race last year and truthfully I don't have any this year. But I enjoy the working out and training. I just go about it so horrible when I don't have an event.

I paid for an event last year and didn't even go to it. Since I was hit by a car and my HIM plans went down the drain, I kind of gave up.

I did a HM this year to see if I could possibly pull off a HIM. I am not sure I could now. I had a hard time with my knee making it through the HM.

Lets just say my finisher pics look like I am in pain or trying to take a poop.

What is funny about the magic # is that although I have a really satisfying pizza life, it has been a decade since I had this flavor for more than 15 fleeting seconds.  Just not high on the priority list.  I think that my ADD makes it hard difficult for me to focus.

Gosh its quiet like a holiday in here. Anyhow the weekend is here. Off to buy a new microwave oven after a cabinet fell off the wall and crushed the one we had. Fortunately the microwave was there to break the fall. Otherwise damage could have been a lot worse.

Its a balmy 15 degrees (celsius suckas) here and looking good for the next 2 days. Later.....

Ah, got to love home ownership...

Fortunately, when my microwave conked out (I forget what happened to it...)  They were not as expensive as I had expected and pretty easy to install.

 

Also, does anyone really use a microwave to cook anything?  It's still 99% a food/drink warmer upper/reheater.  The only thing I can recall "cooking" in a microwave is frozen veggies at times and asparagus.  Other than steaming, the microwave is the best way to cook asparagus.  Just wrap in a wet paper towel and zap it for a couple minutes.
