We usually plan weekly menus to include a leftovers on Thursday or Friday -- finishing up what we had Sunday, Monday & Tuesday-- and that's after I took leftovers for lunch at least one day. Last night the kids got to choose from Chicken Curry, Tuna Casserole, and Cajun Catfish Wraps.
Leftover chicken, pork, sloppy joe, etc. easily becomes burritos/wraps with some onion, beans and spices.
We try to get the most mileage possible out of the food we buy.
