Subject: RE: What to serve at a Kona Party?For a dessert, I might try to do some variation of a pineapple shortcake. Something like diced pineapple (use the regular canned stuff to keep it simple) and banana over shortcake. Reduce a little pineapple juice from the can and add some arrowroot or corn starch to thicken it and mix it with the fruit so that it has a little bit of a sauce to it. Put it on top of the shortcake and then, drizzle with Kahlua and top with whipped cream (or, for people like me, skip the Kahlua). Maybe finish with some toasted coconut. You could put it on pre-made shortcakes, or get pre-made pie crusts and put it in those and refrigerate. |
