Subject: What to serve at a Kona Party?

I'm having friends over to watch the stream of IM Kona live on Saturday, and can't really think of too many theme foods to serve. I'll do Hawaiian chicken sliders, but otherwise clueless for appetizers and desserts.

Any suggestions? Gu shooters are verboten!

Ham - anything from a pig.

Anything with pineapple, coconut, coffee , tropical fruit, seafood

 

 

ETA - perhaps get a couple of pork shoulders and do a hawaiian bbq pulled pork?  slow roast the pork in banana leaves, add bbq sauce after shredding.   Maybe find a way to incorporate Kahlua into something.

I think that wipes out half the regional foods, hehe.

 

Well, any recipe that calls for pork *should* be able to have chicken substituted just fine.  You can even slow roast chicken and shred it like a pork shoulder.

For a dessert, I might try to do some variation of a pineapple shortcake.

 

Something like diced pineapple (use the regular canned stuff to keep it simple) and banana over shortcake.  

Reduce a little pineapple juice from the can and add some arrowroot or corn starch to thicken it and mix it with the fruit so that it has a little bit of a sauce to it.  Put it on top of the shortcake and then, drizzle with Kahlua and top with whipped cream (or, for people like me, skip the Kahlua). Maybe finish with some toasted coconut.

You could put it on pre-made shortcakes, or get pre-made pie crusts and put it in those and refrigerate.

That sounds good, as did the idea for a Hawaiian pizza. I could always change the chicken sliders to a teriyaki beef, and make an appetizer of chicken, pineapple, mango skewers. Although slow roasted shredded chicken sounds damn good too.

You've confused the Kool-Aid man with the How about a nice Hawaiian punch dude.

Brian: Expensive, but Poke is delicious.

Check food network. I know Diners, drive-ins and dives has done shows from there and they typically post recipes from places they go.

Don't forget some Kona coffee after dinner.   Hard to find 100% Kona on the mainland, and it can be $40 a pound... but oh-so-good!

Should be able to get it at "The Fresh Market" stores (that's where I get mine).

There's one in Glen Mills, PA and one in Horsham, PA.
